Luigi Brusco​  - EXECUTIVE CHEF


Luigi Brusco, a native of Pozzuoli, is a Chef by profession - he defines himself extrovert and innovative who loves to combine typical Italian cuisine with a contemporary twist, without forgetting his region of origin.

He boasts twenty years of experience, the passion for cooking has grown with him, since he was very young after his studies at the Hotel Institute, he was determined to follow his great interest in cooking and to make it a profession.

He trained in important restaurants in Italy including the renowned Quisisana of Capri up to Switzerland at the Grand Hotel du Golf & Palace in Crans Montana. He follows several cooking courses, studies and keeps up to date by learning the techniques of the various cooking, the relationships between products and their reactions.

He lives in the family with his wife and children.

In 2018 he got two Gambero Rosso forks.


Davide Della Pina  -  COMMIS DI CUCINA

Davide was born in Pietrasanta in '98. He grew up with a passion for football and cooking.

Growing up he decided to develop the second one by graduating from the Istituto Alberghiero di Massa and then starting his seasons at the Mondial Resort & Spa becoming a point of reference for Chef Luigi Brusco.

In 2021 winter season, he enriched his gastronomic experience by working in a JRE restaurant in Varese, "Colonne" of the Michel Star Chef Silvio Battistoni, bringing with him creativity and innovation.





Fabio, born in 1985, is originally from Massa, his passion for hospitality it is from the age of 18, working seasonally in renowned restaurants in Versilia. In 2017 he begins his experience in an elegant restaurant in Pietrasanta which is part of an Italian holding that will take him to Milan in the famous Ristorante Da Giacomo where he increases his professionalism.


Passionate about enology, he is studying as a sommelier.

Emanuele Zeni ​ - BARTENDER


Emanuele originally from Carrara, he attended the Hotel Institute where he cultivated a passion for restaurants and bars. He approaches bartending by working in various places in Versilia during the summer. Once his studies are completed he decides to continue this path with experiences in Malta and Switzerland where he master this profession together with the two languages.

Especially fond of wines, he is studying as sommelier.


His signature cocktail is the Blanco Cocktail.


Erika Francesconi​ - CHEF DE RANG

Erika Francesconi was born in Pietrasanta in July 2000, in 2014 she began her studies at the Liceo Galileo Galilei Chini in Lido di Camaiore and chooses Human Sciences as a specialization.


In 2019 she decides to start her experience in restaurant hospitality and joins the Blanco Restaurant team at the Mondial Resort & Spa in Marina di Pietrasanta as a Commis.

Over the years, thanks to her commitment and passion, she has grown in career by becoming responsible for the breakfast and Chef de Rang for the Restaurant.

Her passion has been handed down by the family, in particular by her grandmother who has always been part of this world, with a well-known restaurant in Camaiore - Bernardone.

Today she lives in Camaiore and her dream is to continue her professional growth in restaurant hostpitality and carry on this passion in the name of her grandmother too.
